Ingredients
Dough
½ cup unsalted butter, melted
2 cups nut or soy milk, warm to the touch
½ cup granulated sugar
1 packet active dry yeast (or 1 tablespoon)
5 cups all-purpose flour, divided
1 teaspoon baking powder
2 teaspoons salt
Filling
4 tablespoons butter, softened
1 cup blueberry preserves
Frosting
4 oz cream cheese, softened
2 tablespoons nut or soy milk
1 teaspoon vanilla extract
1 cup powdered sugar
Instructions
Make the Dough
Generously grease a 9-inch (23 cm) cast iron skillet or round cake pan.
In a large bowl, whisk together warm milk, melted butter, and sugar. The mixture should be 100–110°F (40–43°C).
Sprinkle yeast evenly over the mixture and let sit for 10 minutes, until foamy.
Add 4 cups flour and stir until just combined.
Cover and let rise in a warm place for 1 hour, until nearly doubled in size.
Shape the Rolls
Preheat oven to 325°F (160°C).
Add remaining ¾ cup flour, baking powder, and salt. Turn dough onto a floured surface.
Knead lightly, adding up to ½ cup more flour if needed, just until the dough is no longer sticky.
Roll dough into a large rectangle about ½-inch thick.
Mix softened butter with blueberry preserves and spread evenly over the dough, leaving a 1½-inch border.
Roll tightly from the bottom edge upward.
Slice into 8 equal rolls.
Rise & Bake
Place rolls into the prepared pan. Cover and let rise for 30 minutes, until puffy and touching.
Bake for 45 minutes, then loosely cover with foil and bake an additional 35 minutes, until fully cooked.
Frost & Serve
Whisk together cream cheese, milk, vanilla, and powdered sugar until smooth.
Cool rolls for 20 minutes, then drizzle generously with frosting before serving.
