½ cup unsalted butter, melted
2 cups nut or soy milk, warm to the touch
½ cup granulated sugar
1 packet active dry yeast (or 1 tablespoon)
5 cups all-purpose flour, divided

1 cup strawberry preserves

Instructions
Prepare the Dough
Generously grease a 9-inch (23 cm) cast iron skillet or round cake pan.
In a large bowl, whisk together the warm milk, melted butter, and granulated sugar. The mixture should be between 100–110°F (40–43°C).
Sprinkle the yeast evenly over the mixture and let sit for 10 minutes, until foamy.
Add 4 cups of flour and mix until just combined.
Cover the bowl and let rise in a warm place for 1 hour, until nearly doubled in size.
Shape the Rolls
Preheat the oven to 325°F (160°C).
Stir in the remaining ¾ cup flour, baking powder, and salt. Turn the dough onto a floured surface.
Knead lightly, adding up to ½ cup additional flour, just until the dough is no longer sticky.
Roll the dough into a large rectangle about ½-inch thick.
Mix the softened butter and strawberry preserves. Spread evenly over the dough, leaving a 1½-inch border around the edges.
Roll the dough tightly from the bottom edge upward.
Cut into 8 equal rolls.
Second Rise & Bake
